Apple Pie Waffles with a Cider SyrupI’ve been pretty MIA since last Thursday. Since then, I’ve packed up myself and my kids and flew down to Missouri, to finally join my husband. It’s been an adjustment for sure, the size of the (super small) kitchen being one of the biggest. I just keep reminding myself, it’s only for 16 weeks..but I can’t complain, I’m just glad to have the chance to be here, it’s worse than all of us being apart for 4 months.

We have to go off base for everything now, its kind of a pain in the arse. I’ve heard its worse for those overseas, like no outgoing mail..(think of their husbands/wives that are in Afghanistan..no care packages…) And then there’s those who aren’t even getting paid..this is awful, and its so much harder when it affects you directly..all I can say is that our government needs to get their sh*t together. PRONTO.

It’s still Fall, its still apple picking season, and lordy, I just love them so much! I haven’t even made an apple pie yet! Blasphemy. BUT I did make these inanely good Apple Pie Waffles with and Apple Cider Maple Syrup.

Much less fuss..(I hate working with pie dough sometimes), the waffles is spiced with all the right flavors, the apples are caramelized, oh yah. Then its all drizzled with an apple cider maple syrup, made from the caramelized apple drippings. I made these for my son and my parents, and there was lots of moaning and groaning, which in our house, is a sign of a fantastic dish!

Apple Pie Waffles with a Cider Syrup

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 6-8 Large Waffles

Perfectly Spiced Waffles topped with Caramelized Apples and an Apple Cider-Maple Syrup! These waffles will make you want to wake up just for breakfast!

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon all-spice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 1/4 cup buttermilk
  • Caramelized Apples
  • 3 Tablespoons butter
  • 4 apples, sliced thin
  • 1 Tablespoon white sugar
  • 1 Tablespoon dark brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup apple cider
  • 3 Tablespoons Pure Maple Syrup

Directions

  1. In a large skillet over medium-low heat, melt the butter. Add the apple slices and toss to coat.
  2. Sprinkle on the white sugar and cinnamon. Toss.
  3. Saute the apples for 8-10 minutes until they begin to soften.
  4. Add the brown sugar and cook over medium heat for an additional 2-3 minutes until the sugar caramelizes.
  5. Transfer the apples from the skillet to a bowl, leaving behind any liquid.
  6. Turn the heat up to high, add the apple cider, whisking the pan to get any of the browned bits.
  7. Add the maple syrup, whisk together, reduce the heat to medium, and allow the juices to simmer for 3-5 minutes, until the sauce has thickened slightly.
  8. Preheat your waffle iron.
  9. In a large bowl whisk together the flour, baking powder, baking soda, white sugar, brown sugar, cinnamon, nutmeg, all spice, cloves, and salt.
  10. Add in the egg and the buttermilk, and whisk until it all comes together.
  11. Cook in 1/4 cup increments according to your waffle irons instructions.
  12. To assemble, top your cooked waffles with the apple slices and drizzle with the cider syrup, enjoy!
