This is the best time of year, I love Fall and the holiday season for so many reasons, all the sweet deliciousness just being one of them!

They’re so soft and gooey on the inside with nice crispy edges, plus they only take about 10 minutes to throw together, you don’t have to worry about chilling time, or scooping out the dough, which is awesome for anything last minute.

Dark Chocolate, Pumpkin Butter, & Butterscotch Skillet Cookie | Fabtastic Eats This particular skillet cookie is sweet and gooey, loaded with dark chocolate, butterscotch chips, and pumpkin butter! You can use homemade pumpkin butter or buy store bought, whatever you’ve got will work! Bake it up, and start scooping right from the pan, or let it cool and serve in slices. Top with ice cream if you so desire or enjoy as is! No matter how you eat this, you’re going to love it!

Dark Chocolate, Pumpkin Butter, & Buterscotch Skillet Cookie

Yield: 1 - 8" Skillet Cookie

A sweet, soft, and gooey pumpkin butter, dark chocolate, and butterscotch filled skillet cookie, with crispy edges!

Ingredients

  • 1 stick (1/2 cup) butter, melted
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin butter
  • 1 1/2 cups AP flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup dark chocolate chips
  • 3/4 cup butterscotch chips

Directions

  1. Preheat oven to 350°
  2. In a large bowl, mix together the melted butter and both sugars. Whisk in the vanilla and egg.
  3. Add the pumpkin pie spice and the pumpkin butter, and stir until smooth.
  4. Pour in the flour, baking soda, and salt, fold until just combined.
  5. Add in the chocolate and butterscotch chips and stir to evenly distribute.
  6. Scrape the dough into an 8" skillet and spread evenly to the edges.
  7. Bake in the oven for 30-35 minutes. Remove and enjoy!
