Quinoa Sweet Potato Patties with Caramelized Onions and MushroomsWhen we left Maine, it was starting to feel like Fall…crisp cool air, leaves changing, jeans and scarves (scarfs?), PSL…then we got to Missouri, and its been hot, high 80’s, SO humid my hair can’t even handle it, sticky, and buggy. I mean, I guess I should be happy that it still feels like Summer. But I’m not. Fall is my favorite and I was so ready for it. When we got here I had to break out the shorts and tanks again. What a drag. (dramatic much?) Word on the street (the weather channel), is that the heat and humidity is supposed to break this weekend and we’ll get to enjoy some dry air and weather in the 70’s. Here’s to hoping.

Government shutdown anyone? But I don’t have much TV to talk about because where we are has NO DVR! gasp! So I haven’t been able to catch up on much! I did watch Nashville though, next to Revenge its my favorite, because seriously, what happened to Greys?! Snooze Fest. All I have to say about Nashville so far, is wth deacon? you’re pissing me off, I hate pity parties.

You could definitely put these on buns too and make them a sandwich, I opted out of that this time. Next time for sure. The Caramelized onions and mushrooms with BBQ sauce take it up another level. Don’t like mushrooms? Leave them out. But definitely add the caramelized onions. Yes. The quinoa helps add a little texture, since sweet potatoes are soft, you don’t want it to be all mush. They’re fantastic.

Quinoa Sweet Potato Patties with Caramelized Onions and Mushrooms

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 2-4 Patties, depending on the size

Quinoa & Sweet Potato Mashed together to form the perfect base for Caramelized Onions, Mushrooms, and a drizzle of BBQ Sauce!

Ingredients

  • 1 Teaspoon Oil
  • 1 Teaspoon Butter
  • 1 small yellow onion, sliced
  • 3-4 baby bella mushrooms, sliced
  • 1/4 cup dry quinoa, cooked according to instructions
  • 2 medium sweet potatoes
  • 2 Tablespoons Flour
  • 1 teaspoon smoked paprika
  • 3 Tablespoons BBQ Sauce, divided
  • salt and pepper

Directions

  1. Heat a large skillet over medium heat. Add the butter and oil, heating up until shimmering
  2. Add the onions and mushrooms, toss to coat, and spread evenly over the bottom of the pan. Reduce heat to medium-low, and cook for 30-40 minutes more, stirring often, so they don't stick and burn to the bottom. Set aside.
  3. While the caramelizing is going on, Scrub your sweet potatoes, poke with a fork, and pop in the microwave for 10-12 minutes, or until soft all the way through.
  4. Peel away the skins of the sweet potato and mash it together in a bowl. Add the cooked quinoa, flour, paprika, 1 Tablespoon of the BBQ Sauce, and a dash of salt and pepper. Mix together and form into patties.
  5. Re-heat the skillet to medium-high heat. Carefully place patties on it, cooking each side 2-3 minutes until golden brown, flipping one time, carefully.
  6. Place on plates, top with caramelized onions and mushrooms, drizzle with a little BBQ sauce and enjoy!
